For the No Money Sailors in the VR Volvo Ocean Race at https://www.facebook.com/groups/vor2014nms/ we have set an Alternate Race which aims to cover a as large as possible distance in a given time period (0:00 UTC Saturday to 0:00 Monday). To use Zezo for this I would like to start the route prediction at different time (i.e. Saturday at 0.00 UTC or close to that) than current clock time. I know how to set another start position; but can I also set another start time for the route simulations?

There is no way to set custom starting time right now, just the standard race start time can be set.

It's sometimes possible to move your starting position instead, to a point where the track passes around the start in 3 days
