It is the same as the Roland Jourdain chart.

I feel the SS requires some setup for every race.
But at the same time the wind and the map are loaded worlwide; so SS is able to draw a course, isn't?

You need to use a map with the same polars that the race. If there is the map, then you can put the origin of your boat and the destination.

is it possible to have the "CHRISTMAS RACE" on zezo. Race from Tokyo to San Francisco pass throught HAWAI ?

I don't know what kind of boats it's that race, but on charts if you click under "clipper" into full screen, you will see "clipper", jv mono, jv multi and "jules verne". If someone of this races matches the kind of boats that uses the christmas race (polars) you only need to put an origin and a destination.

It should be as http://zezo.org/XXXXX/chart.pl and what is XXX ?
Regarding boats, I think that Jules Vernes boat is the closest to Mod70.
